Practice Tea By Susan Hanniford Crowley

Those that know me or have been reading Nights of Passion Blog for a bit know that I love tea. While I have been to several teas, I seldom make it. Though years ago, I did a high tea with roast chicken and all the extras.

I have been reading Tea Time magazine lately and became inspired. I especially loved their article about tea being a comfort shared by many people. In the darkest of times, even at war, people had tea.

This is my practice tea for my oldest daughter’s birthday. The choices of sandwiches are made to individual tastes. I don’t own the traditional 3 tier plate stand where you place a different finger sandwich on each tier, so I decided to use my youngest daughter’s blue platter.

The first sandwich is my Cucumber Sandwich with Ham.
Trim edges off of white bread slices.
Spread cream cheese on the bread slices.
Add sliced cucumbers.
Add ham to the sandwich.
Form sandwich, cut in half, then cut each half into 3 triangles. You end up with 6 finger sandwiches. Garnish with cucumber slices on top.

The second sandwich is a BLT (bacon, lettuce, and tomato).
Toast the bread.  Then spread mayo on each slice.
Cook bacon. Add bacon in strips on the bread.
Add lettuce leaves.
Cut grape tomatoes in halves and add to the sandwich.
Form sandwiches. Cut into four pieces. Next time I will be cutting the sandwich in half and then half again.

The third sandwich is my Croissant Club!
Cut the croissants in half but not through. You want the bread to open up.
You had mustard to both inner sides.
You add Smoked Turkey slices.
Then you cut grape tomatoes in half and add to the sandwich.
You add lettuce leaves.
You add Ham slices.
Then you form the sandwich and place it on the plate.

I added grape tomatoes to the open corners of the sandwich display for decor.

My oldest daughter made Almond/Vanilla Tea. We drank tea and ate. What is so nice about all these small sandwiches is that you can have a bit of everything.

Having tea is a cheerful experience for me. I find the choice of finger sandwiches to be as unlimited as our imaginations or preferences.
